This weekend, I made six dozen gingerbread cookies for Jules’s school. They were doing a sensory project and were using Gingerbread Cookies and I instantly thought about the amazing gingerbread holiday cookie recipe I have! I used this Food52 chewy gingerbread cookie recipe and it was perfect. Super easy, nothing fancy, and the cookies came out soft and chewy.
After making six dozen, I feel like I mastered this gingerbread recipe and can share a few tips if you are looking for a delicious holiday cookie recipe.
The Ingredients
The dough was made with ingredients we usually have at home: flour, brown sugar, butter, molasses, and a bunch of cozy spices like cinnamon, ginger, allspice, cloves, and a little nutmeg. The whole kitchen smelled incredible while they baked – total cozy winter night vibes. When I was making all six dozen, I picked up a few helpful tricks that made everything go way smoother.
Helpful Tips
- Make in batches: I worked in batches of two since the recipe is super easy to double. If you’re not trying to make a mountain of cookies, doubling this holiday cookie recipe is the sweet spot as you get plenty without overwhelming yourself, and the dough mixes evenly without destroying your mixer (or your arms).
- Chill the dough: I kept the dough chilled between batches. Whenever it got too warm, the cookies spread weirdly in the oven, so popping the bowl back in the fridge kept them the right shape and made them easier for the kids to decorate.
- Easy cleanup: I used parchment paper on every single baking sheet. Total lifesaver. Nothing stuck, nothing broke, and cleanup was basically nonexistent which matters when you’re pumping out dozens at a time.
