A Christmas Side Dish Recipe That Is Easy To Make In Batches
One of the best things about this Roasted Delicata Squash recipe is how easy it is to make in batches. Whether you’re cooking for 4 people or in charge of making the entire Christmas feast, this side dish scales up perfectly. You can easily double or triple the ingredients without any extra fuss, and roasting multiple trays of squash at once in the oven is super easy.
Roasted Delicata Squash with Whipped Mascarpone and Hot Honey
Step by step instructions for one of my favorite Christmas veggie side dishes, Roasted Delicata Squash with Whipped Mascarpone and Hot Honey.

delicata squash
- 2 cups
argula
- 8 oz
heavy cream
- 4-6 oz
pomegranate seeds
- 4 oz
marscarpone
- 3 tbsp
hot honey
- 2 tbsp
olive oil
- 2 tsp
thyme, rough chop
- 1 tsp
pumpkin spice
- 1 tsp
sugar, powdered
salt & pepper, to taste
directions
Preheat the oven to 425°
To slice your delicata squash, cut off both ends of the squash, then carefully cut squash down the middle lengthwise. Scoop out and discard the insides. Lay squash on the flat side, then cut ½ inch slices.
Add sliced squash to a mixing bowl with chopped thyme, olive oil, salt and pepper. Toss to fully combine.
Add squash to a sheet pan and spread out evenly.
Bake for 25 to 30 mins until golden brown and fork tender. To add a little more color, you can broil for a few minutes at the end.
While your squash is roasting, make your whipped mascarpone by combining mascarpone, heavy cream, pumpkin spice and powdered sugar in a mixing bowl and whip until stiff peaks form.
Once squash is fully cooked, it is time to dish it up!
On a serving tray, lay 1 cup of arugula across the tray, top with delicata squash, then top with large dollops of the whipped mascarpone, top with remaining arugula, then finish with the drizzling of hot honey and garnish with pomegranate seeds.

Unlike some roasted vegetables that can become mushy or lose their texture after being stored, delicata squash maintains its tender yet slightly crispy edges even after a few days in the fridge. To reheat, you can pop it back into the oven for 10 to 15 minutes at 350° or until heated through. You can also toss it in a skillet over medium heat to preserve the crispiness.
