It’s everything you love about a classic chicken pot pie, creamy, hearty, and cozy, but with a slight twist and far less fuss. The best part? It all comes together in one pan, making cleaning up after dinner that much easier.
After working all day, trying to come up with something for dinner can be challenging. I do try to plan out dinner at the beginning of the week, but sometimes things come up and I need to think of a quick dinner that will please everyone. And it’s a bonus if I can throw it together in under 30 minutes without it being a boring dinner!
Plus, this easy fall family dinner idea calls for ingredients that I normally already have on hand so it doesn’t require an extra trip to the grocery store if I decide to make it last minute. Feel free to swap out the veggies, or use fresh veggies if that is all you have.
Making It Easier
For the recipe, you can use either Rotisserie chicken or shred the chicken yourself. I normally opt for using a Rotisserie chicken because of the convenience, but feel free to use whatever you have on hand!
I also normally double this recipe because it’s so easy to store in tupperware and even easier to heat up to have for lunch the next day.
Chicken Pot Pie Orzo

- 3
tablespoon Salted Butter divided
- 1
tablespoon Olive Oil
- 1
large Yellow Onion, finely chopped
- 1/2
Teaspoon Dried Thyme
- 4
cloves Garlic, finely chopped
- 1
cup Celery finely chopped
- 1 bag
Frozen Peas & Carrots
- 1
cup uncooked Orzo
- 2
cups Chicken Broth
- 1
cup Rotisserie Chicken roughly chopped or shredded
- 1 can
Cream of Chicken Soup
- 1/2 cup
Milk
- 1/2
cup Parmigiano grated
- to taste
salt and pepper
Directions
Heat olive oil and 2 tbsp butter in a heavy-bottomed pan over medium heat. Add onion and a pinch of salt; cook 4–5 minutes until softened.
Stir in garlic, celery, frozen peas and carrots, thyme, and another pinch of salt. Cook a few minutes until fragrant and veggies are tender.
Add uncooked orzo and chicken broth, stir and bring to a simmer. Cover and cook for 6 minutes.
Add chicken, milk and cream of chicken soup, stir, then cover again and cook 4 more minutes, until orzo is al dente.
If the mixture looks watery, uncover and simmer briefly to thicken.
Stir in Parmigiano, then season with salt and pepper to taste. Enjoy!
