medium yellow onion, sliced
- 1 oz
ranch seasoning packet
- .87 oz
brown gravy packet (McCormick or similar)
- 1/2 cup
unsalted butter (1 stick)
- 1-16 oz jar
pepperoncini peppers, drained (save juice)
- 1/2 cup
pepperoncini juice
- 1 package

Season your chuck roast with salt & pepper, using a cast iron skillet, or thick bottom pan, heat 2 tablespoons of oil on high and sear the meat on both sides.
Once seared on both sides, place the chuck roast directly into your 6-quart slow cooker or crock pot.
Add the sliced onions, sprinkle the ranch seasoning and brown gravy mix over the roast. Add the sliced pads of butter, then scatter the pepperoncini peppers around the roast and pour in the pepperoncini juice.
Cover the slow cooker and set it to cook on LOW for 8-10 hours or HIGH for 6-7 hours. Don’t open the lid during cooking as it can affect the roast’s tenderness.
Once the roast is done cooking, it will be tender and easy to shred. Use two forks to pull the meat apart right in the slow cooker. Discard any fatty pieces and stir the meat into the delicious gravy.
