One perfect salad for summer is my fire-roasted corn salad, a refreshing and healthy side dish that perfectly complements any summer spread. Fire Roasted Corn Salad
Step by step instructions for Fire-Roasted Corn Salad

- 4 ears
yellow corn, husked and cleaned
- 1
red bell pepper, diced
- 1
orange bell pepper, diced
- 1/2
red onion, diced
- 1 basket
cherry tomatoes, halved
- 1/4 cup
Italian flat leaf parsley, chopped finely
- 2 tbsp
+ 1 tsp red wine vinegar
- 1 tbsp
olive oil
- 1 tsp
kosher salt
- 1/2 tsp
ground pepper
directions
Preheat your grill to medium-high heat. Meanwhile, husk the corn, remove any silk and coat with olive oil and season with salt and pepper.
Grill the corn, place the ears of corn directly on the grill grates. Grill, while turning occasionally, until the con is tender and charred in spots, about 12-15 mins. Place the cooked corn in the fridge to cool.
While the corn is cooling in the fridge, chop the bell peppers, red onion, cherry tomatoes, and parsley.
Remove the corn from the fridge once cooled and cut the kernels off the cob and transfer to a large mixing bowl with the other chopped veggies. TIP: do not cut corn while the corn is in a standing position, place the ear of the corn on its side and rotate as you cut the corn off.
Add olive oil, red wine vinegar, salt and pepper and gently toss until evenly coated. Taste and add more oil and vinegar and seasonings to taste.
Chill for at least 30-60 minutes before serving to allow all the flavors to meld together. Give it a final toss before serving and serve along side your favorite protein for a delicious, light and healthy meal!

I made Cassie’s fire roasted corn salad to go with some chicken kabobs and it it was phenomenal. The recipie was very easy to follow. I do however, have to work on my chopping skills, especially for the parsley🤣 Everyone LOVED the salad. It definitely will be a staple for the summer.. Can’t wait to make the artichoke salad next.
