Chicken Enchiladas
Step by step instructions for super easy chicken enchiladas.

- 1.5 lbs
chicken breast (shredded)
- 24
corn tortillas, small
- 1 (28oz) can
green enchilada sauce (I use Las Palmas)
- 1 (7oz) can
Fire Roasted Green Chiles
- 8 oz
shredded Mexican cheese
directions
Preheat your oven to 350°F. Spray a 9x13-inch baking dish with non-stick spray.
Boil pot of salted water and add chicken, boil for 15-20 minutes until chicken reaches 165° internal temp. Remove chicken and shred with two forks.
In a small pot, add enchilada sauce and fire roasted chiles, bring to a boil and shut off.

Line bottom of tray with 8 corn tortillas. Add layer of chicken, top with 1/3 of enchilada sauce and top with 1/3 of shredded cheese.
Repeat step 4: Layer of corn tortillas, layer of remaining shredded chicken breast, 1/3 enchilada sauce, 1/3 cheese.
Layer final layer of 8 corn tortillas, top with remaining 1/3 enchilada sauce and remaining 1/3 of cheese.
Cover with foil and bake at 350° for 30 mins. Remove foil and bake an additional 15 mins.
Remove from oven and enjoy! Can be served with cilantro, jalapeños, sour cream and Spanish rice.
