After a long day at work or with the kids, the last thing I want to do is go out to eat or come up with new healthy family recipes, so I love to keep this Shrimp Scampi pasta dish in our weekly dinner rotation. While it may sound complicated, it is super easy to make and one of our favorites.
When I think of a making a favorite family dinner recipe, I don’t want it to be too difficult to make. You don’t have to be a trained chef to whip this meal up for your family. Let me show you how to make this yummy dinner on the nights you don’t want to spend too much time in the kitchen.
One of my favorite tips to making this favorite family recipe is to always keep a bag of frozen shrimp in the freezer! Just pull out your desired amount of shrimp before you start cooking and thaw them in a bowl of cold water, so easy!

- 4 tbsp
butter
- 4 tbsp
olive oil
- 8 cloves
garlic
- 1/2 - 1 cup
chicken broth
salt to taste
freshly ground peper
crushed red pepper to taste
- 1 3/4 - 2 lbs
large or extra-large shrimp, shelled
- 1/4 cup
fresh chopped Italian parsley
- 2
lemons, zest and juice both lemons
Angel hair pasta
Directions
In a large skillet over medium heat, melt the butter with the olive oil. Add the garlic and sauté until fragrant, approximately 1 minute, do not burn the garlic. Add the chicken broth, half of the lemon juice and zest, salt, pepper and crushed red pepper and bring to a simmer, for about 2-3 minutes.

Add shrimp and sauté until shrimp turn pink, 3-4 minutes depending on their size. Stir in half the parsley and remaining lemon juice and zest, add ½ c. of reserved pasta water. Bring back to a simmer. Add angel hair pasta to the skillet and combine. Serve in large pasta bowls and top with the remaining parsley. recipes!
