The first month of 2024 is almost over and I wanted to share one of my favorite healthy family recipes you can make to stick to your goals! My delicious Mediterranean Chicken Bake is so easy and healthy to make for the whole family, and even tastes better the next day, making for yummy leftovers! I’ve always had a love for recipes that have been shared and passed down by family, and I’ve always wanted to create a family recipe book, so I’ll be using my website as a digital version for now.
As I mentioned, this Mediterranean Chicken Bake is one of my favorite family dinner recipes that is truly simple yet packed with fresh and bright flavors. By marinating the chicken before cooking it, you’re allowing the flavors to lock in and keep the chicken moist and not dry. I used high-quality olive oil, garlic, fresh oregano, lemon zest, and sliced lemons. The rest of the dish is filled with flavorful ingredients including kalamata olives, marinated artichokes, cherry tomatoes, mozzarella cheese, white beans and fresh parsley. This dish, which will absolutely end up in my family recipe book, can be served alone or with some warm and crusty bread for dipping.
Mediterranean Chicken Bake

large lemon (zest & sliced)
Olive oil
- 4-6
cloves garlic (chopped or crushed)
- 1 tablespoon
fresh oregano
- 1.5-2 lbs
chicken breast
- 2 large
red onions (thinly sliced)
- 1 basket
cherry or grape tomatoes
- 14 oz jar
marinated artichoke hearts, drained
- 14 oz can
white beans (drained & rinsed)
- 1/2 cup
pitted kalamata olives
- 1 small tub
mozzarella balls
Fresh parsley
Salt & pepper
Directions
Cut up chicken breast into bite-sized cubes and marinate in 4-5 tablespoons of olive oil, chopped garlic, zest of two lemons, one whole lemon, sliced and fresh oregano mix, and coat chicken well with marinade. Cover and place into fridge, marinate for 1-3 hours.


Preheat oven to 400 degrees.
In a large roasting pan, add sliced red onions and basket of cherry tomatoes—leave tomatoes whole. Toss with olive oil and season with salt and pepper. Cook for approximately 15-20 minutes until onions are soft and tomatoes start to burst.

While onions and tomatoes are roasting, in a large skillet, heat 1-2 tablespoons of olive oil and begin to cook the chicken. Working in batches, make sure to not overcrowd your pan and ensure that the chicken is in one even layer while cooking. Brown both sides of chicken and set aside, it is ok if chicken is not cooking all the way through.

Pull roasting pan out of oven when ready and add the chicken, beans, artichoke hearts, and olives. Bake for 8-10 minutes or until the chicken is cooked through.

Remove roasting pan from the oven and now top with the mini mozzarella balls and fresh parsley and mix to combine. The mozzarella will melt from the heat of the food and pan. Drizzle with high-quality olive oil, and more fresh parsley, and ENJOY!

This recipe is absolutely delicious, I modified the zesting as I didn’t have a zester by shaving the lemon with a peeler, then putting into a food processor! Albeit time consuming, it worked out! Also, needed to put back in oven to melt cheese. Aromatic tastes really melded together on 2nd day. A winner!

I am curious if you could just put the chicken in the dish with the onions and tomatoes to cook for 10 minutes, then add all the other ingredients to cook for the remainder of the time? Kind of like a “sheet pan chicken” recipe where everything is cooked in the same dish? (Can you tell I am a lazy cook.) I am making this for the first time tonight per your recipe, but substituting mozzarella balls for Feta crumbles, as I cannot do cheese/dairy except for goat and feta cheese.
